In tranquil southern Burgenland, a young graduate of the University of Leoben has a vision. It all began with the combination of two passions - technology and sustainable regional cuisine.

 

Admittedly, in our less maritime latitudes, prawns are not necessarily a dish that you would describe as "regional". Since Georg Ofner's vision, things have changed.

 

He has developed a process for organic rearing. This means that the animals arrive fresh, without the addition of antibiotics, virtually emission-free (the waste heat from a wood chip heating system is used to generate the 28 degree pool temperature), under the highest quality standards and without interrupting the cold chain.
