After the presentation of the Southern Burgenland shrimp farm, we can't get this delicacy out of our heads. My suggestion would be to prepare them the Portuguese way.

 

I love the mixture of sweet and spicy, the texture of the prawn meat and the viscous sauce, which I love to lick off my fingers.

A lot of trial and error preceded this recipe, as I've cooked quite good sauces several times, but it was never quite as accurate as I would have imagined - until I found the secret ingredients. You may be disappointed (which I can understand) because it involves mayonnaise (doesn't even have to be homemade) and ketchup.

 

If these two ingredients hadn't made such an epochal difference in taste and consistency - believe me - I would have kept quiet about them...

 

So, now you know what you're in for. We now recommend activating the right playlist (perhaps Christmas with a touch of fado), putting on an apron and GO!!!!

 

Gambas Portugese

 

For 4 people:

  • 1.5 kg Güssinger prawns (they are always supplied with heads / 1 kg is sufficient without heads)
  • 250 g mayonnaise min. 75% oil (IMPORTANT!!)
  • 6 cloves garlic
  • 100 ml aromatic vermouth (we recommend Noilly Prat)
  • 20 ml rum (rather high quality)
  • 100 ml olive oil
  • 1 teaspoon chili
  • 2 tsp sweet paprika
  • 1 teaspoon thyme
  • 1 tsp sugar
  • 1 tbsp ketchup
  • 1 teaspoon salt
  • 1 pinch of freshly grated pepper
  • fresh parsley
  • lots of lemon

 

First, finely chop the garlic, fry very briefly in olive oil with the paprika (really briefly - otherwise it will be bitter), add the sugar and ketchup, deglaze with rum and vermouth and add all the other ingredients (except the prawns and lemons) and simmer gently for 45 minutes.

 

Fry the prawns briefly in oil over a medium heat, then pour over the sauce, grate over a little lemon zest and leave to marinate for approx. 15 minutes. Garnish with parsley to finish.

 

Cut the lemons and have them ready. We recommend nothing less than the best white bread you know (you really need it for dipping!!).
