How about a wild garlic soup?

Tastes like a walk in the woods, looks like an invigorating magic brew - not to mention the aromatic fragrance. Spring at last - on your plate too!!!

 

As part of our wild garlic frenzy, today we want to devote ourselves to an absolute classic of wild garlic cuisine - wild garlic soup.

Following our own preference, it is creamy, but the binding agent (any kind of cream, vegan or non-vegan) can of course be omitted - for the absolute purists among you.

I cook the vegetable soup needed for the infusion from root vegetables, onion, salt, pepper and of course lovage - just like you would cook a soup - with lots of time and love - in advance.

So while we're on the subject, I invite you to go for a nice walk in the woods and pick some wild garlic, rinse it hot at home while it drips off, activate a suitable playlist (my suggestion would be a mix of Vivaldi, Al Green and Erykah Badu), put on an apron and lipstick (if desired - I don't really know why I always want to wear lipstick when cooking, I'll take Trinny London, Lip2Cheek in the color Rossy) - and you're good to go!!!

When buying ingredients, we ask you (although this is certainly not necessary) to pay attention to the best organic and ethical quality.

We need:

approx. 200 g wild garlic

150 g floury potatoes

1 medium-sized onion or 2 😉

1l vegetable soup (please make your own, or homemade soup seasoning)

200ml either (vegan) whipping cream or, for the exotic, coconut milk (but then possibly also chili)

Grated lemon zest (or - if you have made it - a piece of salted lemon)

heatable vegetable oil

Salt, pepper, nutmeg

 

🌱 Chop and roast the onion

🌱 Pour in the vegetable soup

🌱 Cut the peeled potatoes into small pieces (this makes it quicker) and cook with them

🌱 When the potatoes are cooked, cut them into approx. 2 cm long pieces (IMPORTANT - please make sure you cut them!!!). The long fibers could otherwise destroy your blender) wild garlic and your preferred form of cream (if you have and want, also add the salt lemon)

🌱 Without boiling the whole thing again, now is the time to puree

🌱 If you like it finer, pour the soup back into the pot through a sieve

🌱 Now bring to the boil again briefly and season with grated lemon zest, salt, pepper and nutmeg

 

If you like, you can garnish it with flowers, small wild garlic leaves and/or a dollop of cream (take inspiration from our soup painting!). Have fun! 💚

 

pro.earth tip:

If you like it fruity, you can cook a (finely chopped) apple with the potatoes - it makes the soup even fresher and more delicate. 🍏

Incidentally, it can be prepared with all kinds of herbs (young nettle, chervil, daisies, parsley, young spinach, ...) - there are (almost) no limits to your imagination.
